Pilau, a favourite Eastern dish, consisting essentially of rice, boiled with mutton or other meat, fowl or fish, and flavoured with spices, raisins, &c. The word appears in Persian, Turkish and Urdu, and has been adopted in European languages. The form pilaf, showing the Turkish pronunciation, is also common.
